Remains Of An Indian Village

Underfoot rotten boards, forest rubble, bones....
Animals were here after the plague,
after smallpox to make another ending;
for the tutelary gods of decay
acknowledge aid from any quarter...

Here the charging cotyledons of spring
press green forefingers
 on femurs, vertebrae, and delicate
 bellied skulls of children;
the moon's waylaid light does not shrink
from bone relics and other beauties of nature...

Death is certainly absent now, 
at least in the overwhelming sense
that it once walked at night in the village
and howled thru the mouths of dogs
But everything fades
and wavers into something else,
the seasonal cycle and the planet's rhythm
vary imperceptibly into the other; 
spirits of the dead have vanished,
only great trees remain,
and the birth certificate of cedars
specifies no memory of a village...

(And I have seen myself fade
from a woman's eyes
while I was standing there,
and the earth was aware of me no longer_)
But I come here as part of the process 
In the pale morning light,
thinking what has been thought by no one
for years of their absence, 
in some way continuing them
And I observe the children's shadows
running in this green light from a 
distant star
into the near forest_
wood violets and trilliums of 
a hundred years ago
blooming and vanishing_
the villages of the brown people
toppling and returning_
What moves and lives 
occupying the same space,
what touches what touched them
owes them...

Standing knee-deep in the joined earth
of their weightless bones,
in the archaeological sunlight,
the trembling voltage of summer,
in the sunken reservoirs of rain,
standing waist-deep in the criss-cross
rivers of shadows,
in the village of nightfall, 
the hunters silent and women
bending over dark fires,
I hear their broken consonants...

Demon Hurricane

 
 By now we all heard about Hurricane Matthew bearing down. People have already been killed and who knows how many animals too. And let's not forget the homeless people. The damage is starting to stack up.  
     But how many of y'all have seen the image of a skeleton demon in the satellite image? Maybe the coloring might have something to do with how the image came to be or it's literally a demon controlling the storm and having a blast?
     I do pray for these people and animals and hopefully, they will be as safe as can be.

Frozen Berry Souffle

With just a few ingredients, this tangy frozen dessert will leave you wanting seconds.
This is a picture I got from the internet. 










You will need: 

  1. Ramekins (I was lucky and found mine at the Dollar Tree.)
  2. Box of raspberry gelatin 3 oz. or 85 g (I got 2 boxes.)
  3. 1 cup of water 
  4. Frozen mixed berries (I'm allergic to strawberries and was lucky to find a bag of raspberries and blackberries) 1 1/2 cups
  5. Plain Yogurt 1/2 (but I just added the whole thing. I used the Yoplait Raspberry flavor)
  6. Whipped cream 1/2 cup
  7. Fresh raspberries, for garnish

1. The recipe calls to add parchment paper to circle the inside of the cups which I didn't do, but it still came out just fine without. In a pan boil your water completely before adding your gelatin and then stir until jelly is dissolved. I added one cup of cold water as the gelatin box says and only one. And then add your bag of berries (I added the whole bag, so that's why I needed the second gelatin.) Stir until it starts to thicken. It might take a bit of time 'fore it does, but keep a check on it. Be patient, it will thicken. 
2. When it finally thickens add your yogurt. and let it chill for 20 minutes until it sets.
3. Beat whipped cream in a bowl until it stiffens. I just used a whisk. Fold into berry mixture. (but I ended up mixing it in. (still came out just fine)
4. Freeze for 2 hours. Remove parchment paper if you used it after it freezes.
5. ENJOY.

Option: Garnish with raspberries (or whatever your favorite berry) and whipped cream.

Note: The whipped cream will give it a bit of sweet taste to this tangy dessert. So in honesty, if you can't deal with tangy desserts, then this is not for you. I thought it was super delicious. This was my first souffle.

Cheese Burger Pizza

Just when you thought pizza couldn't get any better. Like pizza, like cheeseburgers? Can't decide on which one? Why not combine the two. I absolutely loved this. It was delicious. I found the recipe in a Campbell's cookbook so I can't take the credit.
I couldn't find the picture like they have in the cookbook. So this is the picture that I took.





You will need:

  1. 2 packages of refrigerated biscuits (7 and 1/2 ounces each)
  2. 3/4 pound of ground beef (but really I just stuck the whole package in the pan)
  3. 1/2 chopped onion (i used the frozen diced onions you can get in the freezer section at your local grocery store)
  4. 1 can of Campbell's condensed cheddar cheese soup/sauce (11 ounces) (didn't use it 'cause it made me sick when I used it before)
  5. 1 can of tomatoes (8 ounces) (I used the diced.)
  6. 2 tablespoons of sliced green onion (didn't add this 'cause not really an onion fan)
  7. 2 teaspoons prepared mustard (didn't add this either)
  8. 1/8 teaspoon hot pepper sauce (didn't add this either)
  9. 1/2 cup of shredded mozzarella cheese (2 ounces) I used the shredded mild cheddar 'cause you put yellow cheese on a cheeseburger. It makes more sense.)
  10. Optional: More onions (sliced onions to add on the very top as a garnish, Pickles of your choice, and last ketchup and mustard. (Didn't add the mustard 'cause I'm not a fan. 
1. Preheat oven to 400F (I opted for 350 which is what I always bake on.) You'll want to butter your 12-inch round baking (didn't have one so I just used my square baking pan) or pizza pan. You have to pinch the edges of the biscuits together to seal 'em. Bake for 10 minutes. It's just a pre-cook and you'll see why in #3.
2. But until then while your biscuits are in the oven in a skillet (or I used a pan 'cause I didn't have a skillet). Medium heat. Cook the beef and chopped onions together until brown and tender. Spoon off fat. Stir in the #4 through #8. (But if you did what I did the only thing to add is #5.) You just heat that right up. 
3. Spread the beef mixture over the biscuits. Sprinkle with cheese and bake 5 minutes so the biscuits can brown and cheese can melt. Garnish with whatever you like on your cheeseburger. (I just used ketchup and pickles.) ENJOY. 

Note: I didn't follow the recipe exactly, but it still came out fanatically.
